Ice cream that’s peaceful and free of animal cruelty is easy to make. The easiest way is to use frozen bananas to make the foundation for your ice cream. You can either enjoy the banana ice cream as it is (always delicious and the quickest dessert ever), or you can add further ingredients (e.g. fruits, matcha, or raw cacao) to create your favorite flavour.
- 4 bananas (sliced, frozen for at least 4 hours)
- 250 g strawberries
- 100 -120 g cashews (soaked and drained)
- lemon juice from 1-2 lemons
- 1-2 tablespoons of your favorite sweetener (e.g., apple sweetener)
- 100 g strawberries for finishing
Put bananas, cashews, lemon juice and sweetener in your high-speed blender and blend until smooth. Then, add the strawberries and blend again until smooth. If too thin, add a few cashews, if too thick, add some water or lemon juice and blend again.
Put the ice cream in a bowl and then in the freezer for a few hours. Then, present your creative ice cream with a few fresh strawberries and any other add-on you prefer.
Enjoy Mother Nature’s nutrient dense power foods. You won’t believe that they can also come as ice cream!
Option: If you have an ice cream machine, you don’t need to slice and freeze the banana. Just blend all ingredients until smooth, and let the ice cream machine do the work for 30 – 40 minutes.
