Carrots are delicious and very healthy. They provide lots of vitamin A and beta-carotene. Most people only know orange carrots. But there are other variations such as these purple carrots. You can also find yellow carrots.


  • 3-4 carrots per person in different colours; washed
  • 2 tablespoons olive oil, extra virgin
  • Sea salt, black pepper
  • Oregano

Creamy Rocket Dip:

  • 1 bunch of rocket (arugula), washed and drained
  • 100 ml oat milk
  • 1 tablespoon olive oil
  • 2 handful sunflower seeds
  • 1 teaspoon sea salt, black pepper
  • 1 teaspoon lemon juice

For the rocket dip, put all ingredients in a high-speed blender and blend until smooth. If you prefer a thinner texture, add more oat milk and blend again. If you prefer a thicker texture, add some more sunflower seeds and blend again. Set aside.

Cut the carrots lengthwise into two pieces, thick carrots into four pieces. Mix the olive oil with sea salt, black pepper and oregano. Put the olive oil mixture on the carrots and roast them in a large pan for at least 10 minutes. You can also bake them in the oven (200°) for 20-25  minutes. Either way, they should remain “al dente.”

Put the carrots on large plates. Add the rocket sauce; add black pepper.
